4 large eggs
1/4 tea spoon salt dash ground black
2 table spoon butter

Beat eggs only until the whites and yolks are mixed. Add salt and pepper and stir only until ingredients are blended.
Melt butter in non stick 9-inch skillet. Pour in egg mixture. Cook over moderately low heat. As omelet cooks, lift the edges and turn them toward the center so the uncooked mixture flows under the cooked portion. Cook only until the bottom is light brown and top is set..
Make a crease across the center with spatula. Fold half omelet over the other half. Serve immediately on a warmed platter. Serves 2. If desired filling may be spread on one side of the omelet just before it is folded or a sauce served over.
