Garlic Soup

3 leeks sliced thin
4-6 cloves garlic crushed
Olive oil
2 cups peeled and diced tomatoes
2 cups diced potatoes
5 cups boiling water
Salt and ground black pepper to taste
Sliced French bread
Grated Cheddar cheese

Cook leeks with crushed garlic in hot oil until tender. Add vegetables and water. Cover and cook slowly until vegetables are tender. Add salt and black pepper and serve hot with toasted bread.

Bread: Brush bread slices with oil and sprinkle with cheese and toast in a very hot oven until golden brown
