Russian Cold Summer Borsch

Ingredients
3-4 medium size beets cooked and shredded
3 medium size carrots cooked and shredded
1 medium size Granny Smith apple
1 large onion chopped
4 medium size potatoes sliced 1inch cubes
1/2 fresh white cabbage chopped
8 whole Allspice
10 whole black peppers
3 bay leaves
13/4 table spoon salt
3/4 table spoon sugar
Fresh green onion chopped
Optional: 3 boiled eggs chopped, 4 cooked favorite hot dogs sliced.

Timing
Preparation time 25 min
Cooking time: 90 min
Cooling time: 3-4 hours

Directions
Bring to boil and then simmer together beets for 60 min and carrots for 20 min. Cool and shred them.

Place in 6 QT pot potatoes, cover 2/3 of pot with water. Bring to boil and simmer for 15min. Add salt sugar, all spices, onion, garlic, apple, shredded beets and carrots. Cook for 10 min. Cool for 3-4 hours.

Serve cold, adding fresh chopped onion, eggs, cold hot dogs and sour cream.
