5 large sweet onions
4 table spoon butter
1 table spoon flour
2.5 quarts brown stock
4 whole all-spices
Salt and ground black pepper to taste
8 thin slices French bread
8 thin slices Gruyere Cheese
Peel and slice onion and saute in butter until they are soft and golden. Add flour, stir and cook 1 min. Add stock and simmer 15 min. Stir in salt, pepper and all-spice Cook 2 min.
Spread French bread with softened butter and cover each slice with slice of cheese. Toast under the broiler until cheese is melted.
Use individual soup bowls with covers. Place 1slice in each bowl and pour hot soup over it. Cover and let stand 5-6 min before serving.
