Split Pea Soup

1 pound green split peas
3 quarts cold water
2 medium size carrots peeled and chopped
1 large sweet onion
1/2 pound smoke bacon chopped
4 cups veal stock
1/2 tea spoon ground black pepper
2 bay leaves
4 whole all-spices
1 table spoon butter
1/2 cup heavy cream
Salt to taste

Wash peas, add water and soak overnight in cool place. Add vegetables, bacon. Cover and bring to boiling point. Simmer about 2.5 hours or until peas are soft and mixture is thick Sieve. Add stock and spices. Bring to boiling point and cook 5 min. Stir in butter and cream just before serving.
