Minestrone Soup

1 package (6oz) minestrone soup mix (Manischewitz recommended)
10 cups water
1 medium size onion chopped
2 medium size carrots peeled and chopped
8 cloves fresh garlic chopped
3-4 bay leaves
5-8 whole all-spices
6-8 whole black pepper
11/2 table spoon salt
11/2 table spoon fresh parley chopped
26 oz tomato purees (Belladoro recommended)

Preparation time: 15 min
Cooking time: 1 hour

Bring water to boiling point. Add minestrone mix, salt, spices and simmer on medium heat for 35 min. Add onion, garlic, tomato puree, parsley and cook another 25 min. Serve hot with sour cream.
