Ricotta Cheese Cake

26 OZ Ricotta cheese
1 cup sugar
1/3 tea spoon Vanillin
4 eggs
2 table spoon Farina
1/3 cup 2% milk
20 gram sweet butter
1/3 cup Orange liqueur (Cointreau recommended)
200 gram sweet dry apricots

Preparation time 15 min
Cooking time: 60 min

Mix Farina and milk. Soak sliced sweet apricots in orange liqueur. Beat eggs, sugar and vanillin. Add ricotta and mix well with Farina/milk and egg/sugar mixtures. Add ? sweet butter and continue mix. Add soaked apricots. Spread ? sweet butter 10 inch round Pyrox pan. Pour mixture into pan and bake about one hour at 360°F. Serve with jam or fresh raspberry.
