Cream Cheese Cups With Blackcurrant Preserve

2 packages cream cheese at room temperature
13/4 cup sugar
2 large eggs
4 ml rum essence (Dr.Oetker recommended)
12 round cookies (Balocco recommended)

Preparation time: 5 min
Baking time: 20-25 min at 350°F \
Preheat oven to 350°F.

Place pepper cupcake liners in each cup of muffin pan. Place cookie inside of each cup.

Beat cream cheese until fluffy with mixer. Add sugar, eggs and essence and beat well after each addition. Spoon cream cheese mixture on top of each cookie. Bake 20-25 min Cool completely. Serve with blackcurrant preserve.
