Apple, Nuts Angel Cake

Ingredients
TOPPING:
2 large Granny Smith apples peeled and chopped
1 cup walnuts chopped
1 cup fresh or dry apricots chopped
2 table spoon fresh lemon juice
1/4 cup sugar
1/4 tea spoon vanillin

CAKE:
12 egg whites
2 cups sugar
1/3 tea spoon cream of tartar
1cup flour sifted
Lemon essence (Dr.Oatker recommended)

OPTIONAL CREAM:
1 cup sour cream
1/3 cup honey

FOR CREAM:
Beat sour cream for 2-3 min with electrical mixer on high speed. Add honey and beat 2 more minutes.

Timing
Preparation time: 15 min
Baking time: 45 min

Directions
Mix well all ingredients for topping. Lay down wax paper on the bottom of square baking pan (8x12inch). Spread mixture evenly in the baking pan.

In large bowl beat egg whites with electric mixer on high speed until the eggs make firm peaks. Add sugar mixed with cream of tartar and beat about 2 min. Add lemon essence and beat another few minutes until very thick and shiny. Add flour and beat for 2 more min or until all ingredients incorporated. Pour this mixture into baking pan.
Bake 45 min at 350°F in preheated oven.

Remove cake from the oven and invert the pan on the cooling rack. Cool and serve with cream - optional.
