Perch Russian Style

1 dressed perch 3-4 pounds
1 medium size onion sliced
4 garlic cloves chopped
1 table spoon fresh parsley
2 bay leaves
1 tea spoon fresh dill chopped
1 tea spoon salt
6 whole black peppers
6 whole All-spices
1 table spoon vinegar
11/2 cups Italian bread crumbs
1sick butter
2 hard boiled eggs chopped

Preparation time: 10 min
Cooking time: 20-30 min

Wash and place perch in a large saucepan. Add onion, parsley, dill, bay leave, peppers, vinegar and hot water to cover. Bring to boiling and reduce heat. Simmer 10-15 min or until fish flakes when tested with fork. Transfer fish to a warmed platter. Fry Italian bead crumbs in half the butter, add chopped eggs and spoon over fish. Melt remaining butter and pour over fish. Sprinkle with chopped parsley.
