Gourmet Toast With Baked Salmon

1 Italian bread or 2 packages French rolls sliced length wise for sandwiches.
3 large eggs
1/3 table spoon salt
1/4 table spoon ground black pepper
3 cups 2% Milk
Olive Oil for saute

1.5 pound Salmon
1/3 cup white wine
1/3 cup Olive Oil
2/3 cup saute mushrooms with onions
3 cloves of garlic finely chopped
1/4 cup parsley
1/2 medium size onions chopped
3 table spoon Mayonnaise (Kraft Mayo-Real recommended)
Salt and ground black pepper to taste

Cooking Time: 25-30 min

Cooking time: 35-40 min

Wisk eggs with salt and pepper. Add milk. Mix well. Slice bread ? inch thick. Soak each slice in milk mixture 5 sec. Saute slices for 40sec on each side on slow- medium heat Always use preheat skillet. Saute until slightly golden

Washed salmon sprinkled with salt and black pepper place in Pyrex form 11x15.5 already greased by Olive Oil. Pour wine and Olive Oil on top of salmon. Spread Mayo. Sprinkle with chopped garlic and onion. Spread mushrooms and sprinkle parsley on top. Cover with aluminum foil. Place dish in the oven. Cook covered approximately. 35-40 min at 350° F

For best results: marinate salmon at least 4 hours before cooking, but even better: overnight.

Serve salmon with hot toast
