Baked Catfish

2 pounds catfish
1/2 cup dry wine
1/3 cup Olive Oil
1 cup sauté mushrooms with onions (Get recipe in vegetable section)
1 medium size leak-sliced
1 peeled carrot shredded
1 can cornel corn drained
3 cloves of garlic finely chopped
1/4 cup parsley
1/4 cup dill
1/2 medium size onions chopped
3 table spoon Mayonnaise (Kraft Mayo-Real recommended)
1 tea spoon Dijon mustard
Salt and ground black pepper to taste

Preparation Time: 15 min
Cooking Time: 35 min

Washed catfish sprinkled with salt and black pepper place in Pyrex form 11x15.5 already greased by Olive Oil. Pour wine and Olive Oil on top of catfish. Spread Mayo mixed with mustard Sprinkle with chopped garlic and onion. Spread mushrooms, carrot, corn and then top with sliced leak. Sprinkle dill and parsley on top. Cover with aluminum foil. Place dish in the oven. Cook covered approximately. 30-35 min at 350° F

For best results: marinate catfish at least 4 hours before cooking, but even better: overnight.

Serve with dry wine.
