Bass Baked With Mushrooms

5 pounds dressed striped bass
2 table spoon olive oil
1/3 cup dry white wine
1 table spoon lemon juice
20 olives with stuffed with garlic
1 pound uncooked shrimps
1/2 pound sliced mushrooms
1/2 medium size onion chopped
1/2 stick butter
1 cup thick cooked tomatoes
Salt and ground black pepper
1/4 tea spoon sugar

Cook mushrooms and onion in 2 table spoon butter until all liquid has evaporated. Add tomatoes, sat, pepper and sugar. Cook 2-3 min stirring constantly.
Sprinkle fish with salt and pepper. Heat remaining butter and oil in a long baking pan, add fish and cook in a preheated oven at 375°F 10min or until fish is golden. Spread the mushroom-tomato mixture over a long piece of foil the length and width of the fish. Cook the remaining ingredients together over low heat 5 min and spoon the mixture over the fish. Bring both ends of the foil up over the fish and make a lengthwise drug store fold over it. Turn up the ends, folding them 3 times. Place fish on a baking sheet and cook in preheated hot oven 400°F 10-12 min or until the steam has inflated the foil. Transfer the foil wrapped fish to a platter and serve it in the foil.
