Baked Pork With Mushrooms

5-6 pounds pork loin
1/2 bottle dark beer (St.Paul girl recommended)
2/3 table spoon salt
1/3 table spoon ground black pepper
1/4 table spoon ground all-spices
1/2 table spoon Hungarian paprika
1 table spoon parsley
1/2 table spoon dill
5-8 cloves garlic chopped
1/2 medium size onion chopped
1/ 2 jar sweet and sour duck sauce (Mikee recommended)
2 table spoons mayonnaise (Kraft recommended)
2/3 table spoon old style mustard (Maille recommended –whole grain Dijon mustard)
11/2 cup sauté mushrooms
Olive oil

Preparation time: 15 min
Baking time: 150-180 min – 30 min per pound at 350°F

Wash meat and split along with sharp knife in half.
Mix salt, peppers, dill, paprika and parsley. Rub this mixture on all sides of the meat. Place meat in baking oiled pan. Pour beer on top. Cover with foil and marinate in refrigerator for 1-2 hours.

Mix duck sauce, mustard, mayonnaise, garlic and rub this mixture over marinated pork on all sides. Evenly spread saute mushrooms in the center. Secure roll with tooth picks. Sprinkle with parsley, onion, garlic and paprika. Cover with foil and bake at 350°F
