Ingredients
4 pounds lamb leg sliced
2 medium size onions chopped
3 medium size carrots chopped
2 medium size tomatoes peeled and chopped
8 cloves garlic chopped
1pound okra chopped
2/3 cup Cinzano wine
11/2 table spoon salt
1/2table spoon sugar
4-6 pitted prunes
2 bay leaves
6 whole Allspice
6-8 whole black pepper
2 table spoon parsley
2 cups water
1/3 cup olive oil
Timing
Preparation time 25 min
Cooking time: 1 hour 40 min
Directions
Wash meat and place in non-stick oiled pan. Sauté meat on all sides for 10 min. In another nonstick pan in olive oil sauté onion and carrots.
Add meat to onion and carrots; pour water on top to cover meat. Cook for 35 min and add all spices, and wine. Cook for another 35 min. Add salt, sugar, okra, parsley, tomatoes, and garlic. Cook 25 min.
Serve hot with rice or mash potatoes.
