Baked Pork Marinated In Beer

Ingredients
5 pounds of pork
11/3 table spoon salt
1/3 tea spoon ground black pepper
1/3 tea spoon ground All spice
1 table spoon fresh parsley chopped
2-3 Bay leaves
5-8 cloves garlic sliced
1 cup of dark beer
6 table spoons Mayonnaise
2 tea spoon Old style Dijon mustard (Maille recommended)
1 plastic baking bag
4 baking potatoes cubed
2 medium size carrots chopped
2 cups mushrooms
1 large onion chopped

Timing
Preparation time: 10 min
Baking time: 2.5 hours at 350°F

Directions
Wash pork. Sprinkle salt, peppers and spices on both sides of pork Make cuts in pork in different places and place sliced garlic inside this pockets.
In medium size bowl mix potatoes, carrots, onion and mushrooms. Add salt and ground pepper to taste
Place meat in baking plastic bag. Pour beer on top. Add potato, carrots, onion and mushrooms. Add mayonnaise mixture and mix well Make sure that meat completely covered with mayonnaise mixture. Close the bag and place into the baking pan. Bake in the preheated oven 2.5 hours at 350°F
Serve hot or cold.
