Baked Chicken Cassis In Tomatoe Sauce

3 pounds Amish fresh chicken cut on parts
1 medium size fresh onion chopped
2 medium size fresh carrots chopped
6-8 whole Allspice
10 whole black pepper
6-8 cloves garlic chopped
1/3 table spoon parsley
1/4 table spoon dill
1/3 cup olive oil
1/2 cup Cassis liqueur (Milady liqueur recommended – Product of Moldova)
1/2 cup Florentine Spinach & Cheese tomato sauce (Classico recommended)
1/3 cup honey barbecue sauce (Sweet Baby Ray’s recommended)
11/2 table spoon sugar

Preparation time: 15 min
Cooking time: 75-80 min at 350°F

In Pyrox pan mix washed onion, carrots, parsley, dill, salt, spices olive oil, Cassis liqueur. Place washed chicken in this marinade for 10-15 min. Make sure that all sides of chicken covered by turning chicken several times in marinade.

Mix well Florentine spinach & cheese tomato sauce, barbecue sauce and sugar.
Spread tomato mixture over all sides of chicken. Sprinkle with fresh chopped parsley.

Cover with foil and bake at 350°F for 75-80 min
