Chicken Baked In Blackcurrant Cassis

2 pounds chicken drums
2 pounds chicken wings
1/2 table spoon salt
3 bay leaves
4-5 whole Allspice
5-5 whole black pepper
3 table spoon Olive oil
1/3 cup blackcurrant cassis (Lejay-cassis/Creme deCassis de Dijon liqueur recommended- Product of France)
2 table spoon parsley

Tomato sauce:

2/3 jar Sweet onion & roasted garlic sauce (Newman’s Own recommended)
1/3 jar Honey barbecue sauce (Sweet baby Ray’s recommended)
3 tea spoon sugar

Preparation time: 20min
Cooking time: 65 min

Wash chicken parts. Sprinkle with salt, pepper and spices. Pour olive oil and cassis into baking pan
( Pyrox 10.5 x 15.5 recommended) Make sure that all chicken parts completely cover in oil and cassis mix. Let it stand for at least 15 min. Spread tomato sauce evenly. Cover pan with foil. Bake 65 min at 350°F.
Serve with mash potato or rice.
