Backed Chicken Quarters With Apricots

Ingredients
4 pounds Amish fresh chicken cut on parts
1 medium size fresh onion chopped
2 medium size fresh carrots chopped
1/3 tea spoon ground Allspice
1/2 tea spoon ground black pepper
6-8 cloves garlic chopped
1/3 table spoon parsley
1/4 table spoon dill
1/3 cup olive oil
1 can Apricots
1/2 cup duck sauce
2 table spoon Mayonnaise
1 tea spoon Dijon mustard
1/3 pound smoked bacon sliced

Timing
Preparation time: 15 min
Cooking time: 75-80 min at 350°F

Directions
In Pyrex pan mix washed onion, garlic, carrots, parsley, dill, salt, spices olive oil, drained apricot juice. Place washed chicken in this marinade for 10-15 min. Make sure that all sides of chicken covered by turning chicken several times in marinade.

Mix well duck sauce, mayonnaise and mustard.
Spread this mixture over all sides of chicken. Sprinkle with fresh chopped parsley. Place sliced apricots and bacon on top.

Cover with foil and bake at 350°F for 75-80 min
